Regular Blue Box Macaroni Ingredients:
Enriched Macaroni Product (Wheat Flour, Niacin, Ferrous Sulfate [Iron], Thiamin Mononitrate [Vitamin B1], Riboflavin [Vitamin B2], Folic Acid) Cheese Sauce Mix (Whey, Milkfat, Milk Protein Concentrate, Salt, Calcium Carbonate, Sodium Tripolyphosphate, Contains less than 2% of Citric Acid, Sodium Phosphate, Lactic Acid, Milk, Yellow 5, Yellow 6, Enzymes, Cheese Culture).
They make it look good with all all the vitamin labeling... but really, they are "enriching" the wheat with B Vitamins to "fortify it"and give it a longer shelf life.. which is convenient for stores and those making money off the product. Natural wheat doesn't last that long, so by adding these "vitamins" you get a 90% longer shelf life... I'll take the natural, un-messed with stuff please!
But... Kraft has wised-up and created an organic version of their product and it tastes almost exactly the same... but no yucky junk mixed in!
Organic Ingredients:
Organic Macaroni Product (Made With Organic Semolina [From Wheat]), Organic Cheddar Cheese Sauce Mix (Organic Whey, Organic Skim Milk, Organic Cheddar Cheese [Cultured Pasteurized Organic Milk, Salt, Enzymes (Non-animal)], Salt, Organic Cornstarch, Yeast Extract, Annatto [Color].
{granted, semolina is not the BEST wheat durum, as its very slightly processed, BUT... it is still considered organic which is good}... Annatto is a color derived from the seed of a plant, a natural plant based coloring. No chemicals.
What is also good about the Organic Kraft version is that the cheese is also organic... some organic pasta brands don't use organic cheese...
And... when you find it on sale, the organic version is only 10 cents more "expensive" than the non!
I know there are a LOT of organic boxed macaroni products out there, but this is a super easy food swap... same brand and almost exactly the same taste!
Of course, finding your own organic whole wheat macaroni pasta and making your own organic cheese sauce is best... but in a pinch, this is an easy swap.
